Are the winter blues getting you down? This easy go to recipe will warm you up and keep you cheese lovers oh so satisfied. With minimal effort you can turn this favourite cheese into the star of the night.
INGREDIENTS (serves 4)
1 Ripe/Soft Kris Lloyd Artisan Brie or Camembert
Savoury: Fresh Herbs, Chilli, Garlic & Cracked Pepper
1. Pre-heat oven to 200c
2. Cut the top off of the cheese and with a generous helping of all the ingredients listed above place on top of the cut half of cheese. Leave some remaining herbs and chilli for final touches.
3. Place the lid of the cheese back on and place in a ramekin dish. Brush with olive oil.
4. Bake at 200c for 10 minutes.
5. Remove from oven carefully, finish with more fresh herbs and finely chopped chilli and serve immediately with bread or crackers.
Match with either red or white South Australian wine. My pick is Coriole Vineyard’s Fiano which is a drier white wine that I think works well with savoury dishes. This is a great sharing dish which is very quick and easy to prepare.
